  1. 4 Eggs

  2. 1 cup 198g / 7oz Sugar

  3. 1/2 cup 118ml Oil

  4. 1/4 cup 59ml Pineapple juice

  5. 1/2 cup 118ml Canned crushed pineapple with juice

  6. 1 tablespoon 15ml Baking powder

  7. 3 cups 187g / 6.6oz Flour

  8. 1/2 cup 73g / 2.6oz Chopped macadamia nuts

  1. Combine eggs, sugar, oil, juice and pineapple and mix well. Sift together baking powder and flour and mix into pineapple mixture. Fold in nuts.

  2. Pour into greased and wax paper-lined 9- by 5-inch loaf pan and bake at 350 degrees until toothpick inserted comes out clean, about 50 minutes. Or fill greased muffin pans 3/4 full and bake at 350 degrees 25 minutes.

  3. This recipe yields 1 loaf, 12 servings.
