  1. Asian Tofu Sandwich with Grilled Vegetables

  2. Serves: 4

  3. 1/2 cup Asian tofu marinade

  4. 1 pound firm tofu

  5. 2 red bell peppers, seeded and julienned

  6. 2 red onions, sliced

  7. 2 yellow squash, sliced

  8. 1/4" thick

  9. 4 scallions

  10. 1 lime

  11. 2 teaspoons low sodium soy sauce

  12. 4 slices herbed bread

  13. 1 tomato, sliced

  14. Drain the tofu in a colander over a bowl in the refrigerator. Remove

  15. the tofu from the colander and place in a bowl with the marinade.

  16. 2 to 3 hours for the tofu to absorb the

  17. marinade flavor. Remove the tofu from the marinade and slice

  18. 4 equal pieces about 1/4 inch thick. Reserve the

  19. marinade to use with the vegetables.

  20. Preheat the grill to medium. When the grill is hot, toss the

  21. vegetables in the marinade for about 5 seconds. Place the vegetables

  22. on a grill-pan and toss for about 3 minutes until the vegetables

  23. begin to wilt and brown. Place the tofu slices on the grill and cook each side for about 3 minutes or until the tofu is golden

  24. brown. Set aside to cool. While the tofu is cooling, grill the

  25. scallions until golden. Place the scallions on a plate and squeeze

  26. the lime and soy sauce over them.

  27. Toast the bread and top with a lettuce leaf and slice of tomato.

  28. Place the tofu and a scallion and a portion of the grilled vegetables

  29. on top.
