  1. 2 tbsp cashew nuts

  2. 2 large dried red chillies ? tsp coarse chilli powder

  3. 1 tsp Chinese peppercorns salt sesame oil for frying

  4. 1 chopped ginger

  5. 3 tsp chopped garlic cloves

  6. 3 chopped spring onions

  7. 3 tsp corn flour

  8. 2 tbsp beaten egg Sauce

  9. 2 tsp sugar

  10. 2 tbsp vinegar

  11. 1 tbsp soya sauce

  12. 2 tbsp white wine

  13. 100 ml chicken stock

  1. Mix the chicken with beaten egg, white wine, corn flour and salt. Set aside for 30 minutes. Deep-fry the chicken in warm oil until tender. For the sauce, combine vinegar, soya sauce, sugar, white wine, corn flour and stock. Fry the chillies, peppercorns with ginger, garlic and chilli powder. Return the chicken to the pan and add sauce, spring onions and cashew nuts. Serve hot.
