  1. Potato-Stuffed Green Peppers

  2. 4 large green bell peppers

  3. 1/2 cup onions, finely chopped

  4. 1/2 cup red peppers, finely chopped

  5. Salt and pepper to taste

  6. 1 Tablespoon dried crumbled chives

  7. 2 cups mashed potatoes

  8. 2 cups tomato sauce

  9. Preheat oven to 350 degrees. Slice away pepper tops below stems.

  10. Remove seeds and interior spines. Gently parboil peppers about 5

  11. minutes. Drain upside down. Set peppers aside.

  12. Saute onions and red pepper until soft. Add seasonings and mix well

  13. into mashed potatoes. Carefully stuff peppers, set them in a deep-

  14. sided baking dish. Pour tomato sauce around base of peppers. Bake

  15. 350 degrees for about 20 minutes covered. Uncover, and bake

  16. minutes longer. Serve warm with corn on the cob. Makes 4 servings.
