  1. Wilted Waldorf Salad

  2. Yield: 6 servings

  3. 1/3 cup slivered almonds

  4. 1/3 cup chopped walnuts

  5. 6 Tbsp cider vinegar

  6. 2 Tbsp sugar

  7. 1 large tart apple

  8. 1 tbsp salad oil

  9. 1 large onion, thinly sliced

  10. 1 garlic clove, pressed/minced

  11. 1/2 tsp caraway seed

  12. 4 cups finely shredded red cabbage

  13. salt In a 10-12" frying pan over medium heat, stir nuts until lightly

  14. browned, 8-10 minutes. Remove from pan; set aside.

  15. In a bowl, mix 1/4 cup vinegar and the sugar. Core apple and cut into 1/2" cubes; stir into vinegar mixture.

  16. Add oil, onion, garlic, and caraway to frying pan; stir over high

  17. heat until onion is limp, 4-5 minutes. Add cabbage and remaining

  18. 2 tablespoons vinegar; stir until cabbage barely wilts, about minutes. Pour into a shallow bowl. Top with apple mixture and nuts;

  19. mix. Add salt to taste.
