  1. 1 tablespoon vegetable oil

  2. 1 large red onion, chopped

  3. 1 medium (1 1/2 pounds) head red cabbage, thinly sliced

  4. 1/4 cup water

  5. 3 tablespoons vinegar

  6. 3 tablespoons light-brown sugar

  7. 1/4 to 1/2 teaspoon salt

  8. 1/4 teaspoon ground black pepper

  1. Heat oil over medium heat in a 5-quart Dutch oven. Add onion; sautÈ until lightly browned. Stir in cabbage, water, vinegar, sugar, 1/4 teaspoon salt and the pepper; bring to a boil over high heat.

  2. Cover; reduce heat to low and cook, stirring occasionally, until cabbage is just tender--6 to 8 minutes.

  3. Taste and add salt, if necessary. Transfer cabbage to a serving bowl.
