  1. 1 cup 62g / 2 1/5oz All-purpose flour

  2. 1/4 cup 59ml Molasses

  3. 1/4 cup 59ml Hot water

  4. 2 tablespoons 30ml Packed brown sugar

  5. 2 tablespoons 30ml Shortening

  6. 1/2 teaspoon 2 1/2ml Baking soda

  7. 1/2 teaspoon 2 1/2ml Ground ginger

  8. 1/2 teaspoon 2 1/2ml Ground cinnamon

  9. 1/8 teaspoon 0.6ml Salt

  10. 1 Egg white

  11. Frozen (thawed) reduced-fat whipped

  12. Topping - if desired

  13. Orange Sauce

  14. **ORANGE SAUCE**

  15. 3 tablespoons 45ml Sugar

  16. 1 tablespoon 15ml Cornstarch

  17. 1 cup 237ml Water

  18. 1 tablespoon 15ml Orange peel - finely shredded

  19. 1 tablespoon 15ml Orange juice

  1. Heat oven to 325º. Spray loaf pan, 8 1/2 × 4 1/2 × 2 1/2 inches, with nonstick cooking spray. Beat all ingredients except whipped topping and Orange Sauce in medium bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan.

  2. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.

  3. Cool 10 minutes; remove from pan. Serve warm or cool with whipped topping and Orange Sauce.

  4. ORANGE SAUCE:

  5. Mix sugar and cornstarch in 1-quart saucepan. Gradually stir in water.

  6. Cook over medium heat, stirring constantly, until mixture thickens and boils.

  7. Boil and stir 1 minute; remove from heat. Stir in orange peel and orange juice. Serve warm or cool.
