  1. Apricot and Passion Fruit Soft Serve

  2. 1 cup chopped dried apricots

  3. 297 g packet silken tofu drained

  4. 3/4 cup soy drink

  5. 1/4 cup sugar

  6. 1 ripe banana, mashed

  7. 1/4 cup slivered almonds toasted

  8. pulp of 3 passion fruit

  9. Place apricots and 1/2 cup of water in small saucepan over medium

  10. 3 minutes or until soft

  11. uncovered, on HIGH for 3 minutes. Leave to cool.

  12. Process the apricots, tofu, soy milk, sugar and banana in a food

  13. processor until smooth.

  14. Pour the mixture into a cake tin, cover with foil and freeze for several hours or until partly set.

  15. Transfer to a food processor; process in batches until smooth (or 20 minutes

  16. and passion fruit pulp. Serve immediately. Makes 6x1/2 cup serves.
