  2. 8 cups water

  3. 1/3 cup parsley, minced

  4. 2 tablespoons basil, minced

  5. 1/4 cup green onions, sliced

  6. 1/4 cup lemon juice, fresh squeezed

  7. 1/2 cup extra virgin olive oil

  8. 1 teaspoon soy sauce

  1. Preparation : In a saucepan boil barley in water for 15 minutes, drain.Steam barley for 10 minutes more, cool. Add parsley, basil, and green onions,let sit so flavors can blend. In a small bowl beat together, lemon juice, olive oil and soy sauce. Addtomatoes. Toss with barley mixture. Chill.
