  10. 3 Ounces White Chocolate

  11. 1/4 Cup Light Corn Syrup

  12. 2 Tablespoons Orange Juice -- freshly squeezed

  13. --Assembly--

  14. 2 Cups Milk

  15. 1/2 Cup Seltzer

  16. Make the white chocolate syrup:

  17. 1. Melt the white chocolate with the corn syrup and orange juice

  18. according to the directions in the Chocolate Key. Whisk the white

  19. chocolate mixture until completely smooth. Cool until tepid.

  20. Assemble the egg creams:

  21. 1. Pour 1 cup of the milk into a 12-ounce glass. Top with a spritz

  22. of seltzer so that the white foam reaches the top of the glass. Place

  23. a spoon in the glass. Pour 3 tablespoons of the white chocolate

  24. syrup into the glass, hitting the bottom of the spoon if possible,

  25. and stir with quick strokes to blend the syrup into the milk

  26. without deflating the foam. Repeat to make another egg cream.

  27. Serve immediately.
