  2. CARROT OR ZUCCHINI MUFFINS

  6. 1 1/2 c Whole-wheat flour

  7. 1 t Salt

  8. 1 1/2 ts Baking soda

  9. 1 t Cinnamon

  10. 1/2 ts Nutmeg

  11. 1 1/2 c Natural bran

  12. 3 ea Carrots,

  13. 1c grated

  14. 2 ea Eggs

  15. 1/4 c Vegetable oil

  16. 1 1/2 c Skim milk or orange juice

  17. 2 tb Vinegar

  18. 1/2 c Honey

  19. 1/4 c Molasses

  20. 1/2 c Raisins

  21. Blend flour, salt, baking soda, cinnamon, nutmeg, and 4 to 5 seconds. Pour

  22. into large mixing bowl. Process carrots until pureed

  23. and add to dry ingredients. Process the eggs and oil

  24. for 2 - 3 seconds and add to bowl along with the milk,

  25. vinegar, honey, molasses, and raisins. Stir with a

  26. wooden spoon until just blended; do not overmix.

  27. Spoon the batter into paper-lined muffin tins and bake
