  1. 4 Chicken Breasts Without Skin - Chopped

  2. 15 1/4 Pineapple Chunks In Juice - Drained

  3. 1/2 Green Onions - Chopped

  4. 1/4 Dry-Roasted Peanuts - Chopped

  5. 1/4 Red Pepper - Chopped

  6. 1/4 Golden Raisins - Finely Chopped

  7. 3/4 Fat-Free Mayonnaise

  8. 2 Curry Powder

  9. 1/2 Ground Ginger

  10. 1/2 Salt

  11. 1/2 White Pepper

  1. In large bowl, combine chicken, pineapples, onions, peanuts, red pepper, and raisins. In a small bowl, combine mayo, curry, ginger, salt and pepper.

  2. Fold mayo mix into chicken mix. Store in an airtight container in fridge.

  3. Serve with crackers and 2 fruits. This is a very colorful salad.
