  8. 1/2 lb Shrimp, peeled and chopped

  9. -1/2 lb squid, cut into -pieces

  10. 1 md Yellow onion, chopped

  11. 1 md Bell pepper, chopped

  12. 1 tb Chopped fresh parsley

  13. 3 cn Whole pimentos

  14. 1/2 c Olive oil

  15. 1/4 ts Saffron

  16. 1 Lemon cut into wedges

  17. 1 Chicken, cut in pieces

  18. --DIRECTIONS--

  19. 1 md Ripe tomato, chopped

  20. 1 Clove garlic, minced

  21. 1 t Salt

  22. 1 c Canned green peas

  23. 2 c Rice

  24. 4 c Chicken broth

  25. Red pepper to taste

  26. If you don't have the traditional paella pan, a

  27. shallow, heavy, large skillet can be used. Wash

  28. chicken and dry with paper towel. Saute in hot olive

  29. oil for a few minutes and remove to a pot with 4 cups

  30. of water. Boil chicken for 15 minutes. Meanwhile, in

  31. the same skillet, fry the onions and bell peppers.

  32. Add tomato. Meanwhile rinse the seafood. Add the

  33. seafood to the skillet with onions, bell pepper and tomato. Cut pimentos into strips and add half to

  34. skillet along with the peas. Mash garlic, parsley and salt together with the back of a wooden spoon and add

  35. to pan. Add the saffron, then the chicken, rice and sausage. Cover with 4 cups boiling chicken broth.

  36. Stir gently to distribute ingredients evenly. Bring to

  37. a boil for five minutes; then reduce heat to medium

  38. and continue cooking until rice is tender and dry and 20 to 30 minutes. Do no

  39. stir during cooking. When done adjust seasoning and add red pepper if you wish. Garnish with remaining

  40. pimento strips and lemon wedges. Serve from pan.
