  1. 2/3 cup hot coffee

  2. 1 large dried chipotle

  3. 1 tbsp olive oil

  4. 1 tsp ground cumin

  5. 1 hp tsp smoked paprika

  6. 1/4 tsp dried oregano

  7. 1 fresh bay leaves

  8. 1 red onion (peeled and diced)

  9. 1 red bell peppers (seeded and sliced)

  10. 1 lb lean ground beef

  11. 1 fresh chili (seeded and chopped)

  12. 1/2 cinnamon stick

  13. 2 cloves garlic (peeled and thinly sliced)

  14. 1/8 tsp sea salt

  15. Freshly ground black pepper to taste

  16. 14 oz can diced tomatoes

  17. 1 tbsp dark brown sugar

  18. 15 oz can kidney beans

  19. Procedure:

  20. 1. Soak dried chili in hot coffee for 5-6 min.

  21. 2. In a sauce pan heat olive oil and saute cumin, paprika, oregano, bay leaves, onions and bell pepper for 5-10 min until pleasant roasting smell starts to come.

  22. 3. Then add ground beef and cook over medium high heat until become brown.

  23. 4. Slice the dried chili soaked in hot coffee and add it to the onion mixture along with fresh chili, cinnamon sticks, sliced garlic, a small pinch of the salt and pepper, and hot coffee, tomatoes, sugar and the beans. Cover and simmer for at least 30 min until all the ingredients incorporate well with each other and beef tender completely.
