  1. 3 lbs 1362g / 48oz Chicken pieces - skin and fat

  3. Flour - all-purpose

  4. 1/4 cup 59ml Olive oil

  5. 2 tablespoons 30ml Garlic - minced

  6. Chicken broth - 14

  7. s whole tomatoes - 14

  8. 1 Hunt's tomato paste

  9. 16 Pearl onions

  10. 1 1/2 teaspoons 7 1/2ml Seasoned salt

  11. 1 1/2 teaspoons 7 1/2ml Ground cumin

  12. 4 sections Oregano

  13. 4 sections Thyme

  14. 1 Bay leaf

  15. 1/4 teaspoon 1 1/3ml Red pepper flakes - crushed

  16. 8 oz 227g Kielbasa or smoked turkey sausage

  17. 2 cups 474ml New potatoes - cut in chunks

  18. 2 cups 220g / 7.8oz Carrots - cut into chunks

  19. 2 cups 474ml Zucchini - cut into chunks

  20. 2 cups 474ml Yellow squash - cut into Whole kernel corn - 8

  21. Cilantro - chopped

  1. In a bag, coat chicken with 1/4 cup flour. Bone chicken in Dutch oven in hot oil; remove and set aside. Drain drippings, except 1 tsp, from pot. Saute 1 Tbsp flour and garlic in drippings 30 seconds.

  2. Stir in next 10 ingredients starting with chicken broth and ending with red pepper flakes. Bring to a boil, reduce heat and simmer, uncovered, 20 minutes. Add chicken and Kielbasa, cover and simmer 20 minutes longer. Skim excess fat. Add vegetables, simmer, covered, 30 minutes longer. Sprinkle with cilantro before serving.
