  1. 4 tablespoons 60ml Cucumbers - peeled, thinly (large)

  2. 1 tablespoon 15ml Fresh dill or 1 tsp. Dried - dill weed

  3. 6 tablespoons 90ml Canola oil

  4. 2 teaspoons 10ml Dijon mustard

  5. 2 tablespoons 30ml White wine vinegar

  6. 1 tablespoon 15ml Salt for the wilting process

  7. 1/2 teaspoon 2 1/2ml Sugar substitute or the real thing

  8. Salt and freshly ground black pepper

  1. Put cucumbers slices in a colander with the tablespoon of salt and let them wilt for bout an hour.

  2. Rinse salt off and press out the excess water.

  3. Combine cucumbers with all else and chill. Toss again before serving.

  4. This is a very light and refreshing salad which makes a nice accompaniment to any entree at any season of the year.

  5. I like to keep it around for munchies and side dishes for dinner or lunch.
