  4. 1/4 teaspoon saffron threads, crumbled

  6. 2 tablespoons unsalted butter

  7. 1 medium onion, diced small

  8. 4 medium garlic cloves, minced

  9. 1/2 teaspoon ground ginger

  10. 1/2 teaspoon ground cumin

  11. 2 tablespoons cilantro, chopped

  12. 5 or 6 ounces spinach, cooked (optional, but highly suggested)
