  1. 125g butter , chopped

  2. 110g firmly packed brown sugar

  3. 1 tablespoon honey

  4. 200g rolled oats

  5. 40g sunflower kernels

  6. 20g desiccated coconut

  7. 1/2 tsp ground cinnamon

  8. 75g chopped dried apricot s

  9. 2 tablespoons dark Chocolate bits

  1. Preheat oven to moderately slow. Grease 20cm x 30cm lamington pan.

  2. Combine butter, sugar and honey in medium saucepan; stir over low heat until sugar is dissolved.

  3. Transfer butter mixture to medium bowl; stir in oats, sunflower kernels, coconut, cinnamone and apricots. Press mixture into prepared pan; sprinkle with choc bits.

  4. Bake in moderately slow oven about 30 minutes or until browned lightly. Cut into pieces while still warm; cool in pan.
