  1. 2 pitta breads

  2. 1 garlic clove

  3. juice 1 lemon

  4. 3 ripe plum tomatoes , cut into chunks

  5. 1/2 cucumber , cut into chunks

  6. 6 radishes , sliced

  7. 1 small red onion , halved and sliced

  8. large handful mint leaves, very roughly chopped

  9. 1 small Cos lettuce , roughly chopped

  10. 1 Baby Gem lettuce , roughly chopped

  11. 2 large handfuls rocket

  12. 5 tbsp olive oil

  13. 200g firm goat's cheese , crumbled into large chunks

  1. Cook the pitta bread on a griddle or in a toaster until brown and crisp. When cool enough to handle, tear into bite-size pieces.

  2. Mash the garlic clove with a pinch of salt, then tip into a large bowl and stir in the lemon juice. Tip all the other ingredients, except the olive oil and goat's cheese, into the bowl, then drizzle over the oil. Gently toss everything together until mixed and dressed. Serve the salad in piles with goat's cheese crumbled over each serving.
