  1. 1. Wash pumpkin seeds to remove any pumpkin fibers.

  2. 2. Combine 1 c. water and 1 1/2 t. salt. Soak pumpkin seeds in mixture for several hours or overnight. Remove from mixture and pat dry.

  3. 3. Butter a jelly roll pan or spray with vegetable cooking spray. Arrange seeds in a single layer on pan.

  4. 4. Roast for 20 minutes at 350 F. Watch carefully, and stir occasionally. Seeds are done when they're golden brown and crunchy.

  5. Variations:

  6. Microwave:

  7. 1. Combine 1/4 c. fresh lemon juice and 3/4 T. salt; mix in seeds.

  8. 2. Place in a glass bowl and microwave on high for 4 minutes. Remove and stir, then return to microwave for 2 more minutes.

  9. 3. Continue cooking for 2 minutes at a time, stirring between cooking times. Seeds are done when they're golden brown and crunchy.

  10. Seasonings:

  11. 1 t. ground cinnamon,

  12. 1/2 t. ground cloves,

  13. 1/2 t. nutmeg, and a dash of salt.

  14. Like things hot? Try sprinkling on a little cayenne pepper. Can't get enough garlic? A little garlic salt will zap some life into your seeds!

  15. The fun part: scooping out the seeds.
