  1. Graham Cracker Cake

  2. 2 cups graham cracker crumbs

  3. 1 cup sugar

  4. 1 cup margarine, not diet

  5. 3 large eggs, separated

  6. 2 teaspoons baking powder

  7. 1 cup all-purpose flour

  8. 1/4 teaspoon salt

  9. 1 cup milk

  10. 1 teaspoon vanilla extract

  11. 1/2 teaspoon lemon peel, grated

  12. 1 cup nuts, chopped

  13. In a large mixing bowl, cream butter and sugar; add egg yolks and beat until light and fluffy. Mix cracker crumbs with sifted flour,

  14. salt and baking powder. Add to the sugar mixture alternating with

  15. the milk, vanilla and lemon peel. Beat egg whites until stiff and fold into the batter along with the chopped nuts. Grease and flour

  16. 9 x 13 x 2-inch pan or two 8-inch cake pans. Pour

  17. 350-degree oven for 30 minutes

  18. or until done. Frost this as you prefer. A good choice would be a

  19. cream frosting made of powdered sugar, milk, and lemon extract.
