  1. 3 garlic cloves, finely minced

  2. 1 tbsp finely grated fresh ginger, optional

  3. 1/4 tsp cayenne pepper, optional

  4. 2 tablespoons Sambal, or other Asian-style chili paste to taste, or may sub red pepper flakes to taste

  5. 1 cup orange jam or marmalade, (strain if contains an excess of orange rind pieces)

  6. 1/3 cup rice vinegar

  7. 1/4 cup hoisin sauce

  8. 1 tablespoon soy sauce

  9. "oven-fried" Buffalo chicken wings (see recipe link below)

  1. Add the glaze ingredients to a saucepan, and bring to a boil over medium heat. Cook, stirring, for 3 minutes. Remove from heat and reserve. When the chicken wings are done, transfer into a large mixing bowl, and while still hot, pour over enough of the glaze to coat. Toss until all the chicken wings are coated well, and let stand for 5 minutes. Toss again and transfer onto a serving platter.
