  8. 1 pound tomatillos -- husked, washed and -- cut into quarters 2 large jalapeno chiles -- (up to 4) stemmed,

  9. -- seeded if desired

  10. -- and roughly

  11. chopped 1/2 cup cold water

  12. 1/2 medium onion -- cut in half

  13. 2 bunches cilantro -- stems and leaves

  14. 2 teaspoons salt

  15. In blender place tomatillos, jalapenos and water. Puree until just chunky. Add

  16. remaining ingredients and puree about 2 minutes more, or until no large chunks

  17. remain. This salsa keeps in the refrigerator, in a covered container, about 3

  18. days.

  19. Yield: 3 1/2 cups
