  1. 3/4 cup 120g / 4 1/5oz Rice

  2. 2 tablespoons 30ml Butter or margarine

  3. 1 tablespoon 15ml Onion (small)

  4. 1 tablespoon 15ml Green pepper - cored and (small)

  5. And chopped 1 Tomatoes - chopped, juice included

  6. 1 teaspoon 5ml Cajun seasoning

  7. 1/4 teaspoon 1 1/3ml Black pepper

  8. 1/2 teaspoon 2 1/2ml Sugar

  9. 1/2 teaspoon 2 1/2ml Worcestershire sauce

  10. 1 Bay leaf

  11. 1/8 teaspoon 0.6ml Ground cloves

  12. 1 Crab meat - white or 3 tablespoons 45ml Grated parmesan

  1. cook rice in 1-1/2 cups water until just tender and water is absorbed, about 18 minutes. Melt butter in medium skillet over moderate heat. Add onions and green pepper and cook until onions are transparent, 2-3 minutes.

  2. Add tomatoes with juice, Cajun seasoning, pepper, sugar, Worcestershire, bay leaf and cloves. Bring mixture to simmer and reduce heat to low.

  3. Cook, uncovered, 10 minutes, stirring frequently. Remove bay leaf. Stir in rice and crab meat. Taste and adjust seasonings.

  4. Transfer mixture to 1-1/2 quart casserole and sprinkle with cheese. Bake uncovered, at 375F for 20 minutes.
