  1. 1 can chipotle pepper in adobo sauce -

  2. 1/4 cup lime juice -

  3. 1/3 cup fresh cilantro, chopped -

  4. 1/4 cup sour cream -

  5. 2 tablespoons mayonnaise -

  6. 2 cups peeled, shredded jicama BURGER -

  7. 1 clove garlic, minced -

  8. 2 teaspoons chili powder -

  9. 1/2 teaspoon salt -

  10. 1/4 teaspoon black pepper -

  11. 1/2 pound lean ground beef -

  12. 1/2 cup canned black beans, rinsed and drained -

  13. 1/4 cup fire roasted chunky salsa

  1. In a small food processor or blender, combine chipotle peppers, lime juice, and 1/2 teaspoon salt. Process until smooth. Place in a medium sized bowl and mix in cilantro, sour cream, and mayo. Shred jicama with a hand held grater. Add jicama to bowl, and toss to combine. Cover and refrigerate until ready to use. In a medium sized bowl, combine salsa, garlic, chili powder, 1/2 teaspoon salt and black pepper. Add beef and beans; mix together. Shape into six equally sized patties. Grill burgers for 10-13 minutes, or until cooked through, turning once while cooking. Serve immediately with slaw on top of burgers.
