  1. 2 Chickens - (2 1/2 lbs ea)

  2. 1 Onion - squeezed through (large)

  3. A garlic press

  4. 3 Limes

  5. 3 tablespoons 45ml Olive oil

  6. 1 tablespoon 15ml Sumac

  7. 3 Garlic cloves - finely chopped

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  1. Mix the above ingredients together. Pour marinade over chicken, coat cover and refrigerate overnight.

  2. Grill the chicken halves, turning frequently and brushing with the marinade, until done. Remove to a platter.
