  1. 2 medium green peppers

  2. 2 tomatoes

  3. 1/4 sweet onion

  4. 1 avocado

  5. 1 garlic clove

  6. 1/4 cup balsamic vinegar

  1. Slice peppers in half and remove all seeds. Dice tomatos, onions, and avacado. Mince garlic clove. In a mixing bowl, combine tomato, onion, avocado, and garlic. Add 2 Tbsp of balsamic vinegar. Mix ingredients. Add a pinch of salt and pepper. Add salsa mixture to halved peppers (stuff them) and drizzle remaining dressing over peppers.
