  1. 1 lb 454g / 16oz Lean ground beef

  2. 1/2 lb 227g / 8oz Ground lamb

  3. 1/2 lb 227g / 8oz Ground pork

  4. 4 Garlic cloves - finely chopped, up to

  5. 7 1 teaspoon 5ml Salt

  6. 1 teaspoon 5ml Baking soda

  7. 2 teaspoons 10ml Freshly ground black pepper

  8. 1 teaspoon 5ml Cayenne pepper - or more Seasoned pepper and garlic pepper - to taste

  9. 1 Egg white - beaten

  1. Recipe Instructions Mix all, altogether. You may wish to combine the seasonings or grind them together before adding them to the meat. Shape in thumb-sized sausages, or in croquette size shapes. Grill on open grill until done. Serve with pita bread or hard rolls, and onions (raw or sauteed). The smaller size works great for an appetizer (on a toothpick). Traditionally, these are not served in barbeque sauce.
