  1. 2 pork tenderloins, about 1 pound each 1/3 cup orange juice

  2. 2 tablespoons molasses

  3. 1 tablespoons grated fresh ginger

  4. 1 teaspoon ground coriander Minted Mango Relish:

  5. 1 mango, peeled and diced

  6. 2 tablespoons chopped fresh mint

  7. 2 tablespoons dried cranberries

  8. 1 tablespoon seasoned rice vinegar

  9. 1/4 teaspoon crushed red pepper

  1. In heavy-duty resealable plastic bag, combine all ingredients except Relish; seal bag and refrigerate for 4 to 24 hours.

  2. Remove pork from marinade and place in shallow roasting pan. Discard marinade.

  3. Roast pork in a 450°F (230°C) oven for 20 to 25 minutes, until internal temperature reads 155°F (approximately 65°C). Remove pork from oven; let rest for 5 minutes before slicing to serve with Minted Mango Relish.

  4. For Minted Mango Relish: In small bowl, stir together diced mango, mint, cranberries, rice vinegar and 1 crushed red pepper.
