  9. 12 Limes

  10. 1/4 Cup Coarse Sea Salt

  11. 1 Tbs Fenugreek Seeds

  12. 1 Tbs Mustard Seeds

  13. 2 Tbs Chile Powder

  14. 1 Tbs Ground Turmeric

  15. 1 Cup Vegetable Oil

  16. Cilantro -- for garnish

  17. 1. Cut each lime lengthwise into 8 slim wedges- place in a large bowl

  18. - sprinkle with salt and set aside.

  19. 2. Put fenugreek and mustard into a skillet and dry-roast over medium

  20. 1 to 2 minutes, until they begin to pop. Put into a mortar

  21. and grind to a fine powder with a pestle.

  22. 3. Add chili and turmeric and mix well. Sprinkle the spice mixture

  23. over the limes and stir gently. Pour the oil over the limes and cover

  24. with a dry cloth.

  25. 4. Leave the bowl in a sunny place 10 to 12 days, until the limes have

  26. softened. Pack in jars , seal them, and store in a cool, dark place.

  27. I found this recipe in 'The Hot and Spicy Cookbook' by Crescent Books.
