  1. 1 lb 454g / 16oz Shrimp - medium, cleaned, cook

  2. 1 lb 454g / 16oz Feta cheese

  3. 1 cup 237ml Scallions - sliced

  4. 1 cup 237ml Tomato sauce

  5. 1/2 cup 118ml Olive oil

  6. 1/4 cup 59ml Lemon juice - fresh

  7. 1 tablespoon 15ml Parsley - chopped

  8. 1 tablespoon 15ml Basil - fresh, chopped

  9. 1 tablespoon 15ml Dill - fresh, chopped

  10. 1/2 teaspoon 2 1/2ml Salt

  11. 1/4 teaspoon 1 1/3ml Pepper

  12. 1 1/2 lbs 681g / 24oz Fettuccine - or flat noodle**

  1. * feta cheese, drained and coarsely crumbled ** noodles, cooked and drained **

  2. Combine shrimp, feta cheese, scallions in a large bowl.

  3. Add tomato sauce, olive oil, lemon juice, parsley, basil, dill, salt, and pepper; mix well.

  4. Cover and refrigerate 1 hour.

  5. Toss shrimp mixture with hot noodles and serve immediately or refrigerate 1 hour and serve cold.

  6. I always add about 2 teaspoons of garlic to this.
