  1. Peppercorn Pork

  2. 2 tablespoons green peppercorns, drained

  3. 3 tablespoons sweet-n-hot mustard

  4. 1 teaspoon horseradish

  5. 1/2 teaspoon lemon peel, grated

  6. 1/4 teaspoon salt

  7. 3 pounds lean pork roast

  8. 1 cup apple cider

  9. 1/4 cup cold water

  10. 3 tablespoons cornstarch

  11. 1 apple (cut into thin wedges)

  12. In small bowl, combine peppercorns, mustard, horseradish, lemon

  13. peel and salt. Spread on top and sides of pork roast. Place metal

  14. rack in bottom of slowacooker; pour in cider. Place coated pork

  15. roast on rack in slow acooker. Cover and cook on LOW 9-10 hours.

  16. Then turn on HIGH. Remove pork and rack; cover and keep warm. In

  17. small bowl, combine water and cornstarch; stir until smooth. Add

  18. to drippings in pot. Cook on HIGH 20-30 minutes or until thickened,

  19. stirring occasionally. Slice roast; garnish with apple wedges.

  20. Serve pork with sauce.
