  1. 4 bananas

  2. 300g (11 oz) caster sugar

  3. 4 eggs

  4. 225ml (8 fl oz) sunflower oil

  5. 425g (15 oz) plain flour

  6. 2 teaspoons bicarbonate of soda

  7. 1/2 teaspoons salt

  8. 2 teaspoons cinnamon

  9. 150g (5 oz) walnuts

  10. 100g (4 oz) raisins

  1. Heat the oven to 180 C / Gas 4.

  2. Mash the bananas until they are smooth - you can use a blender or potato masher.

  3. Add all other ingredients, one by one, stirring with each addition. There is no difference in what order you put them in except it's easier if the raisins and walnuts don't go in until the very end.

  4. Lightly grease your baking tin and pour the cake mixture in. Bake in preheated oven for one hour. Enjoy!
