  1. Austrian Coffee Cake

  2. 6oz butter/margarine

  3. 6oz caster sugar

  4. 6oz self raising flour

  5. pinch salt

  6. 3 eggs

  7. coffee

  8. sugar

  9. rum or brandy

  10. 1/2 pint double cream

  11. toasted flaked almonds Cream butter, add sugar, cream together until light and fluffy add

  12. the eggs, beat together thoroughly.

  13. Sieve flour and salt into bowl add the creamed mixture folding in

  14. gently. Put into a greased ring mould - bake at Gas Mark 5 (190C)

  15. for 25-30 minutes.

  16. Turn out and allow to cool.

  17. Make 1/2 pint strong dark coffee, add sugar and rum or brandy to

  18. taste. Replace cake in ring mould, pour over coffee and leave to

  19. soak overnight. Turn out and decorate with cream and nuts.
