  1. 1 onion, chopped

  2. 1 green bell pepper, chopped

  3. 2 cloves garlic, minced

  4. 1 tablespoon butter

  5. 1 (16-ounce) package frozen precooked meatballs, thawed

  6. 1 (15-ounce) can diced tomatoes

  7. 1 (16-ounce) jar Alfredo sauce

  8. 2 tablespoons milk

  9. 2 tablespoons ketchup

  10. 2 tablespoons mustard

  11. 1-1/2 cups shredded Colby cheese

  12. 3 cups frozen French fries

  13. 1/3 cup grated Parmesan cheese

  1. Preheat oven to 375 degrees F. In medium saucepan, combine onion, bell pepper, garlic, and butter; cook for 4-6 minutes until tender, stirring frequently. Add frozen meatballs; bring to a simmer and cook for 5-7 minutes until meatballs are thawed. Add undrained tomatoes and bring to a boil. Add Alfredo sauce and bring to a simmer. Add milk to Alfredo sauce jar, close jar, and shake; add this mixture to the skillet. Simmer 2 minutes.

  2. Remove from heat and add Colby cheese; cook and stir until cheese is melted.

  3. Pour mixture into a 2-1/2 quart to 3 quart casserole dish. Top with frozen French fries and sprinkle with Parmesan cheese.

  4. Bake, uncovered, for 45-55 minutes or until casserole is bubbly and potatoes are golden and crisp.
