  7. 2 tablespoons melted butter -- or other fat

  8. 2 tablespoons flour

  9. 1 cup milk

  10. 1/2 teaspoon salt

  13. Wash the salsify, scrape, cut into small pieces, and drop into cold water to pr

  14. event it from turning dark. Boil in an uncovered pan in a small quantity of un

  15. salted water for 30 minutes, or until tender, and drain. Prepare a sauce of th

  16. e fat, flour, milk, salt, and pepper, pour this over the cooked salsify, reheat

  17. , and serve with the chopped parsley sprinkled over the top.
