  1. 2 ts Butter

  2. 2 Scallions; including a

  3. - little of the greens,

  4. - finely chopped 5 Cilantro sprigs; chopped

  5. 1 lg Ear of corn

  6. - the kernels removed

  7. Water

  8. 2 Eggs

  9. Salt

  10. 1 lg Flour tortilla; -

  11. 2 Corn tortillas

  12. 2 tb Grated Muenster cheese

  13. - OR - Monterey Jack cheese

  1. + MELT BUTTER IN AN 8-INCH pan and add scallions, cilantro and corn.

  2. Cook for a minute or so, add a splash of water and continue cooking until the corn is tender.

  3. Season with salt.

  4. Beat the eggs with a pinch of salt and a teaspoon of water, then pour them into the pan with the corn and scramble them gently with a fork.

  5. Add the grated cheese at the end and stir it in with a few strokes of the fork.

  6. While the eggs are cooking, warm the tortillas in a dry pan.

  7. Serve them hot with the eggs and salsa or extra cilantro, as desired.
