  1. Crust

  2. 1 1/2 cups 219g / 7.7oz Chocolate wafer crumbs

  3. 1/4 cup 49g / 1.7oz Margarine or butter - melted

  4. Filling

  5. 24 Marshmallows - large

  6. 1/2 cup 118ml Milk

  7. 1 teaspoon 5ml Vanilla

  8. 1/8 teaspoon 0.6ml Salt

  9. 6 Peppermint extract

  10. 6 Red food color 1 cup 237ml Whipping cream

  11. 2 tablespoons 30ml Peppermint candy - crushed

  1. Heat oven to 350F. Mix wafer crumbs and melted margarine. Press firmly against bottom and sides of an ungreased 9" pie plate. Bake 10 minutes. Cool.

  2. Heat marshmallows and milk over low heat, stirring constantly, just until marshmallows are melted.

  3. Remove from heat; stir in vanilla. salt, extract and food color. Refrigerate, stirring occasionally, until mixture mounds slightly when dropped from a spoon.

  4. Beat whipping cream in chilled bowl until stiff. Stir marshmallow mix until blended well; fold into whipped cream. Pour into crust.

  5. Refrigerate at least 12 hours.

  6. Before serving, sprinkle with crushed candy.
