  1. 2 1/2 to 3 lbs. chicken breasts salt , pepper to taste

  2. 1 tsp. ginger

  3. 1 1/2 cups bitter orange marmalade

  4. 1/3 cup apple juice

  5. 1/3 cup orange juice

  6. 8 oz. dried apricot s (halved)

  7. 8 oz. dried currant s (can substitute raisins)

  8. 1/4 cup brown sugar

  1. Preheat oven to 375 degrees. Place chicken in roasting pan and sprinkle with salt, pepper, and ginger. Spread marmalade over the chicken and pour juices into the pan. Bake 20 minutes, then remove from oven. Add apricots and currants. Sprinkle brown sugar over chicken and return to oven. Bake, basting frequently, until chicken is golden brown. Remove chicken and fruit to serving platter with some juice on top. Put the remaining sauce in a gravy boat.
