    1. 1/2 c Shortening

    2. 1 1/2 c Sugar

    3. 1 Egg

    4. 5 1/2 c Pastry flour

    5. 3/4 ts Salt

    6. 1 c Milk

    7. 1 1/2 ts Oil of lemon*

    8. 2 ts Ammonium carbonate*

    1. Oil of lemon may be purchased in a drug store.

    2. Cream shortening and add sugar.

    3. Add egg and oil of lemon.

    4. Sift flour before measuring.

    5. Measure flour and sift with salt.

    6. Dissolve ammonium carbonatein a little of the milk.

    7. Add flour and liquid alternately mixing after each addition.

    8. Chill dough.

    9. Roll 1/4" thick.

    10. Cut in squares.

    11. Place on greased baking sheet.

    12. Sprinkle cookies lightly with sugar.

    13. Bake 12-15 mins.

    14. in a 375 oven.

    15. Yields 8 doz.
