  1. Preparation : With a vegetable peeler, remove peels for lemons (refrigerate peeled lemons for juice). Pour vodka into an 8 cup measuring cup or large glass bowl and add lemon peels. Cover with plastic wrap and let stand at room temperature for 1 week. After 1 week, line sieve with paper towels and place over another large bowl. Pour vodka mixture through sieve and discard lemon peels. In a 2 qt saucepan, mix sugar with 3 1/4 cups water and heat to boiling over high heat. Boil 2 minutes. Cool completely. Add cooled syrup to vodka mixture. Pour cordial into small decorative bottles with tight-fitting stoppers or lids. Although it is not necessary to refrigerate cordial, it's best served very cold. We recommend stirring it in the freezer where it can keep indefinitely. Makes about 6 1/2 cups or 34 serving
