  1. Sauce:

  2. 1 Tbsp Cocoa Powder

  3. 1 Tbsp Sugar

  4. cup Hot Water

  5. cup Heavy Cream

  6. 1/4 cup Maple Syrup

  7. dash Vanilla

  8. Crepes:

  9. 2 Large Eggs

  10. 1/2 cup Milk

  11. 1/2 cup Water

  12. 1 Tablespoon

  13. 2 Tbsp Melted Butter- or Canola Oil

  14. 1 tsp Vanilla Extract

  15. 1 1/4 cups All Purpose Flour

  16. dash Salt

  17. Extras:

  18. Confectioners Sugar

  19. Whipped Cream

  20. Chocolate Shavings

  21. Candied Cherries

  22. Butter

  1. In small pan, mix Cocoa Powder, Sugar, and Salt. Add hot water and heat to boiling. Boil for 2 minutes, stirring constantly to avoid burning. Add cream and heat thoroughly- don't boil. Remove from heat and add maple syrup and vanilla. Set aside to cool while making crepes.

  2. In a large mixing bowl, whisk Eggs,Milk, Water, Butter, and Vanilla Extract. Once frothy, add in Flour and Salt. Continue to mix until all ingredients are light and fluffy. Let stand for at least ten minutes before pouring into pan.

  3. Pre-heat small non-stick pan until hot but not smoking- Temperature of pan is important. Too hot and the crepes will burn, not hot enough will cause the crepes to turn too rubbery. Do a test run with the first one in order to correctly obtain the right cooking temperature.

  4. Once the pan is perfect temperature- you may or may not need to use cooking spray- pour a small amount of batter into center of pan and swirl it around until it completes a full circle on the bottom of the pan.

  5. Cook for 2 minute, occassionally tilting pan to make sure mixture is not sticky.

  6. Turn crepe over and cook the other side for an additonal 1 minute. Crepe should be slightly browned but not burned.

  7. Turn Crepe out onto serving platter. Spread butter on top of Crepe and sprinkle with Confectioners Sugar. Continue with additional Crepes then cover with cooled Maple Chocolate Sauce.

  8. Add Whipped Cream-make your own or use already made. Top with Cherry and Chocolate Shavings and enjoy.
