  8. 1 Green Papaya -- peeled, seeded

  9. --and roughly chopped

  10. 10 Scotch Bonnet Peppers

  11. --seeded

  12. 2 Onions -- Quartered

  13. 3 Cloves Garlic

  14. Rind of One Lime

  15. 1/2 c Lime Juice

  16. 1 1/2 c Malt Vinegar

  17. 1 t Salt

  18. 1/4 c Prepared Yellow Mustard

  19. Puree the papaya, Scotch Bonnet peppers, onions, garlic, lime rind, and lime

  20. juice in a food processor. Transfer to a medium saucepan and stir in the

  21. vinegar, salt and mustard. Simmer the mixture over low heat for 20 minutes,

  22. stirring occasionally. Bottle the sauce in hot sterilized jars. From Sugar
