  1. 1 Bigoli - Basic Recipe - (see recipe)

  2. 6 tablespoons 90ml Extra-virgin olive oil

  3. 8 Salted anchovies - fillets removed,

  4. And soaked in milk for 2 hours

  5. 1 Spanish onion - chopped

  6. 1/16" dice (medium)

  7. 1/2 cup 73g / 2.6oz Finely-chopped Italian parsley

  1. Bring 6 quarts water to boil and add 2 tablespoons salt. Place noodles in boiling water, and allow 8 to 9 minutes to cook.

  2. In a 12- to 14-inch saute pan, place oil, anchovies and onion over medium heat and cook. Stir often to break up anchovies until a paste is formed, about 8 to 10 minutes.

  3. Drain pasta and toss into pan. Add parsley, toss through and place on a plate. Serve immediately.

  4. This recipe yields 4 servings.
