  1. 4 skinless, boneless chicken breasts

  2. 4 slices pepper jack cheese

  3. 1/3 cup bread crumbs

  4. 1/4 cup crushed tortilla chips

  5. 1 teaspoon paprika

  6. 1/4 teaspoon garlic salt

  7. 1/4 teaspoon dried oregano

  8. 1/4 teaspoon ground black pepper

  9. 1/2 teaspoon chili powder

  10. dash of cumin

  11. 3 tablespoons melted butter

  1. Preheat oven to 350’F. Pound each chicken breast to a ¼ inch thickness. Place slice of cheese on each chicken breast and roll up to enclose filling. Secure with toothpicks or kitchen twine. Mix bread crumbs and tortilla chips with all seasonings in a shallow dish. Dip chicken rols in butter, then roll in crumb mixture to coat. Place rolls seam-side down in a baking dish. Bake for 25 minutes or until chicken is cooked through and golden brown.
