  1. 3 potato es, cubed

  2. 1/4 cup butter

  3. 4 slices bacon

  4. 1 small red onion , chopped

  5. 1 clove garlic, minced

  6. 1 tablespoon rosemary

  7. 1/2 cup milk

  8. salt and pepper

  1. Place the cubed potatoes in a pot with enough salted water to cover. Boil and cook until tender, about 30 minutes; drain.

  2. Add butter to drained potatoes to melt; set aside.

  3. Cook bacon over medium-high heat until very crisp. Remove bacon to paper towels, allow to cool and crumble. Leave bacon grease in skillet over heat.

  4. Sauté onion and garlic in bacon grease until tender, about 4 minutes. Stir in rosemary and cook 1 more minute.

  5. Mash potatoes. Mix in crumbled bacon mixture and milk.
