  1. Low-Fat Greens Quiche

  2. 2 10 1/2-ounce packages silken firm tofu

  3. 1/8 teaspoon garlic powder

  4. 1 small onion, coarsely chopped

  5. Pinch of turmeric (optional, for color)

  6. 2 tablespoons prepared mustard

  7. 1 cup vegetable broth

  8. 1/2 teaspoon cumin

  9. Salt and pepper to taste

  10. 1 pound greens, rinsed, finely chopped, and cooked (drain well)

  11. Coat a 9-inch pie plate with vegetable cooking spray. Set aside.

  12. Preheat oven to 450 degrees.

  13. In food processor or blender, process all ingredients except greens

  14. until smooth. In large bowl, combine with greens. Spoon into greased

  15. 65 minutes in

  16. 450 degree oven, or until golden and knife inserted in center comes out clean. Makes

  17. 6 servings.
