  1. 1 Tomato sauce - (1 1/2 cup)

  2. 2 tablespoons 30ml Olive oil

  3. 2 tablespoons 30ml Red wine vinegar

  4. 1 tablespoon 15ml Honey

  5. 1 tablespoon 15ml Tomato - cut in

  6. 1/2" cubes (medium)

  7. 1 tablespoon 15ml Green pepper - chopped (medium)

  8. 1 tablespoon 15ml Sweet red pepper - chopped (small)

  9. 1 Celery - chopped

  10. 1 Garlic - finely minced

  11. 1 Cucumber - seeded & chopped

  12. 1 Scallion - chopped

  13. 1/2 teaspoon 2 1/2ml Hot pepper sauce

  14. 1/2 teaspoon 2 1/2ml Black pepper

  1. GARNISH: Herbed Garlic Croutons, dollop of plain yogurt topped with finely minced fresh chives, finely shredded lettuce, or minced parsley (optional).

  2. In a med size mixing bowl, combine tomato sauce, olive oil, vinegar and honey. Stir in remaining ingredients. Top each serving with one of the above listed garnishes. Serve chilled. Makes 4-6 servings. VARIATIONS: Add 2 T chopped fresh mint leaves; omit hot pepper sauce Serve with a substantial salad, and/or a cheese platter.
