  1. 1 (2 1/2kg) whole salt beef brisket

  2. 7 small potatoes, peeled and diced

  3. 4 carrots, peeled and diced

  4. 3 cloves garlic, chopped

  5. 1 medium onion, diced

  1. Preheat oven to 150 C / Gas 2.

  2. Place the brisket in the centre of a roasting tin. Arrange the potatoes and carrots around the sides. Place the onion and garlic on top of the roast and season with salt and pepper. Pour enough water into the tin to almost cover the potatoes. Cover with a lid or thick foil.

  3. Roast for 5 to 6 hours in the preheated oven, until the roast is so tender it can be flaked apart with a fork.
