  1. 1 lb 454g / 16oz Mild sausage

  2. 6 Atkins bread - cut 1/2" cubes

  3. 1 cup 146g / 5.1oz Cooked broccoli florets

  4. 1 cup 146g / 5.1oz Cauliflower florets

  5. 1/2 cup 55g / 1.9oz Cooked baby carrots

  6. 8 Eggs

  7. 1 cup 237ml Cream - mixed with

  8. 1/2 cup 118ml Water

  9. 1 teaspoon 5ml Dry mustard

  10. 1/2 teaspoon 2 1/2ml Salt

  11. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  12. 6 oz 170g Shredded Cheddar cheese - (1 1/2 cups)

  1. Remove sausage from casing and brown in a large nonstick skillet. Transfer to paper towels to drain. Spray a 13- by 9-inch baking dish with nonstick cooking spray.

  2. Combine sausage, bread cubes and vegetables. Pat in an even layer in prepared dish.

  3. Mix eggs, cream mixture, mustard, salt and pepper. Pour over vegetable and bread mixture. Sprinkle with cheese. Cover with plastic wrap. Refrigerate 4 hours or up to overnight.

  4. Heat oven to 375 degrees. Bake strata 40 to 50 minutes, or until knife inserted near the center comes out clean.

  5. This recipe yields 8 servings.
